Frozen Lemon Cheesecake 1 packet Shredded Wheatmeal Biscuits 250g Cream Cheese Base Crush/blend biscuits Filling Place cream cheese in a bowl and mix thoroughly Tips Allow cream cheese to soften by leaving it out of the
fridge for a while before using it. This recipe was kindly supplied by one of our employees and is a favourite amongst Abbotsleigh Staff! _____________ Grilled Lemon and Oregano Chicken 1/2 teaspoon grated lemon peel 4 boneless, skinless chicken breast halves Combine all marinade ingredients in a large bowl. Add chicken breast halves to the marinade. Marinate in the refrigerator for at least 2 hours then grill the chicken unti it is cooked through. Serve with salad and fresh vegetables, such as grilled eggplant and asparagus. _____________ Lemon Delicious Slice Base 1 cup plain flour Combine ingredients and bake in a fan-forced oven at 170°C for 10-15 mins. Top 2 eggs Combine ingredients and spread over base. Bake in a fan-forced oven at 170°C for 10-20 mins. Sprinkle with icing sugar to serve.
