Frozen Lemon Cheesecake

1 packet Shredded Wheatmeal Biscuits
200g Unsalted Butter

250g Cream Cheese
1 can Condensed Milk
1/2 cup Lemon Juice
Grated Lemon Rind

Base

Crush/blend biscuits
Melt butter and add to crushed biscuits gradually
Stir until mixture forms into a crumble
Press biscuit mixture firmly into the bottom of a dish as this will become the base for the cheesecake
Place the biscuit mixture in the freezer to allow it to harden

Filling

Place cream cheese in a bowl and mix thoroughly
Add condensed milk and mix
Now add the lemon juice and rind to the mixture
Mix thoroughly for a few minutes until it is smooth in texture
Remove biscuit base from freezer and place filling on top
Place back in the freezer overnight, or until set

Tips

Allow cream cheese to soften by leaving it out of the fridge for a while before using it.
If desired, allow cheesecake to stand for a few minutes before eating to allow it to soften.
Please note that this cheesecake needs to be kept in the freezer otherwise it will become very soft.

Grilled Lemon and Oregano Chicken

1/2 teaspoon grated lemon peel
2 tablespoons lemon juice
1 tablespoon olive oil
1 teaspoon dried oregano
2 to 3 cloves garlic, crushed

4 boneless, skinless chicken breast halves
(pound to about 1/2 inch thick)

Combine all marinade ingredients in a large bowl. Add chicken breast halves to the marinade. Marinate in the refrigerator for at least 2 hours then grill the chicken unti it is cooked through.

Serve with salad and fresh vegetables, such as grilled eggplant and asparagus.

Lemon Delicious Slice

Base

1 cup plain flour
½ cup butter
¼ cup icing sugar

Combine ingredients and bake in a fan-forced oven at 170°C for 10-15 mins.

Top

2 eggs
2 tbs lemon juice
1 cup sugar
2 tbs plain flour
½ tsp baking powder
Grated rind of lemon

Combine ingredients and spread over base. Bake in a fan-forced oven at 170°C for 10-20 mins.

Sprinkle with icing sugar to serve.
