Lemon Butter

90 grms butter
180 grms sugar
2 tsp grated lemon rind
1/4 cup lemon juice
3 eggs beaten

Soften butter (not melt) in the microwave for 10 - 12 secs on high.
Stir in sugar, rind and lemon juice.
Strain beaten eggs into a bowl and blend well. Cover.
Cook on high for 2 1/2 to 3 mins stirring every 30 secs after 1st minute.
Becomes thicker as it sets. Makes 1 1/2 cups.
Once cool, you can refrigerate and store.

 

Lemon butter can add a delicious twist to your sweet homemade biscuits and can be spooned into tartlets as a lighter substitue for chocolate or caramel filling.
